Skater Ky. Rating: 3 stars. We eat sushi at home pretty regularly. The 2yo and the 6yo love to help layer veggies on the rolls. We usually just do vegetarian sushi but I had the rare can of tuna in the house and decided to try it. The flavor is good. The texture of canned tuna was less than desirable. I think if you used a chunkier higher quality pouched tuna it would be MUCH better.
Rating: 5 stars. As this was my first time making sushi I was quite impressed with myself. However as a sushi connoisseur I thought this was just okay. Maybe it was the tuna from a can or maybe it's because I thought it was a tad too dry. I feel like you needed more mayo and spiciness to mix in with the tuna. I bought a little container of spicy sauce from Wegman's in the pre-made sushi section. I was 99 cents if I remember correctly. I put a little dollop of this on each piece and it SO improved the taste.
Seana Hon. This was descent it was a little fishy tasting but it was ok. I made too much sushi for dinner and had some leftovers for lunch the next day. I actually think this one tasted better the next day. The tuna seemed a lttle dry maybe more mayo? Typically, the spicy tuna rolls I order at Japanese restaurants have a one inch diameter. Smaller rolls are also easier to wrap and cut. While much attention is often given to the fish, nori is also an important part of sushi.
Nori comes in various grades that distinguishes the quality based on color: green lower quality meant for salads , blue, silver, gold highest quality , and more.
The silver or gold grade nori are perfect for sushi. Gold standard nori should be jet-black in color, have a uniform thickness throughout, and a crisp and naturally sweet flavor out of the bag. For the rice, you want to make sure to buy short grain, white rice at your local Japanese market.

Japanese Kewpie mayonnaise is a very important ingredient in many recipes like Sriracha mayo a dipping sauce for karaage or seasoning for salmon poke bowls or tamago sando , and this spicy tuna recipe is no different. Kewpie differs from western mayonnaise due to its rich egg and sweetened flavor. I use a mixture of Japanese mayonnaise Kewpie and sriracha to make the spicy tuna sauce.
I have also seen variations of spicy tuna rolls that omit Kewpie, or use other types of hot sauce, but I prefer the sweet, fatty, and spicy flavor of Kewpie and Huy Fong sriracha. To wrap your roll, use a sushi mat I like to cover mine with cling wrap for easier clean up. After taking a sheet of nori, place the shiny side face down. Dip clean hands into a bowl of water and grab a handful of sushi rice and lay the rice evenly on about half of the nori sheet.
At one inch above the bottom edge, leave a shallow, horizontal indent and place a spoonful of spicy tuna mix along this line. I was shocked at how quickly it came together as well.
A little bit of panko added gave the tuna the perfect crunch. We used it as Onigiri filling and were blown away. Thank you for creating such an amazing recipe!!!!!!!! I think the little mat for rolling is about 7 years old and I had not dared to use it, lol. I also did the California rolls, and they were delicious as well. And truly, very easy to make. What brand of tuna did you use?

Grab the bamboo from both ends of the side with the nori sheet and start rolling. Roll it tight enough so the rice feels tight but no so tight that the tuna mixture spills out from the ends.
Keep rolling until there is a little nori sheet left. Wet your fingers and lightly run them across the edge of the nori sheet. Continue rolling until the mat comes off.

Then the leftover meat that cant quite be cut out, scrapped out with a spoon and used for spicy tuna. I worked as a GM in a sushi restaurant for years.. Oh my God.!!!!!!! My advice is to dip it in soy sauce and wasabi. It brings out the flavor. This is coming from a thirteen year old in home etc. Yes you can. I recommend an albacore if your gonna do it.
I also have done with salmon and it is very good. This will save me SO much money if I can make sushi rolls comparable to what I buy at my local Japanese restaurant weekly! Ahi is the best tuna to use, but make sure you ask your fishmonger if it is safe to be eaten raw.
